- ✨ Add new chain and stablecoin table configs

Adds table configurations for Axelar Dojo, Core, Cosmos, Crypto Org, Dydx testnet, Injective, Kava, Mars, Mocha, Noble, Pacific, Phoenix, and Pirin chains. Includes a stablecoins config to config.json file.
