We will be running these tutorials for molsim 2022 (Monday Jan 17th).
When trying them out I noticed the simtk warning pop up. This updates the notebooks to the new openmm package layout.
It also updates the readme to indicate that these are used again this year

LGTM! For the README, next year (once we have 3 consecutive) we can probably change it to "since 2021" and not have to worry in the future! 😆
