LGTM! For the README, next year (once we have 3 consecutive) we can probably change it to "since 2021" and not have to worry in the future! 😆

We will be running these tutorials for molsim 2022 (Monday Jan 17th).
When trying them out I noticed the
simtkwarning pop up. This updates the notebooks to the new openmm package layout.It also updates the readme to indicate that these are used again this year
