My try at a function to return a shortened path relative to project root. Useful for reporting file locations in RMarkdown/Quarto documents. May address #104.
If we would like to go ahead with this addition, we should discuss if the function should return a string, prepended by a
/(the non-fs implementation).I'm also open to a different function name.
