feat: add support for Symfony 8.0

This pull request updates the Symfony package dependencies in the composer.json file to support newer major versions, ensuring compatibility with Symfony 7.x and 8.x releases.

Dependency version updates:

• Expanded the version constraints for symfony/console, symfony/finder, and symfony/process to allow installation of versions 7.0, 7.3, and 8.0 in addition to the previously supported versions.

Other changes:

• Removed trailing blank lines at the end of the composer.json file for cleanup.

Thanks for the PR. This is not neccesary, as this package is build and downgraded to PHP 7.2
