Update stellar sdk, fix events not being indexed

Description

• Updates to the latest Stellar SDK and makes any relevant changes to the code base to get things working.
• Fixes events not being matched up to an operation and therefore not indexed.
• Remove redefined type from Stellar SDK and use the type from within the Stellar SDK
